Sweet n´Crunchy Salad

I came up with this full meal salad today, you should definately check it out.

Sweet n´ Crunchy Salad
½ dl of sprouted mungbeans
½ dl of finely chopped broccoli
½ dl of grapes cut into quarters
1 tablespoon grated coconut
½ dl of cubed melon
½ dl of green asparagus in small pieces*
some nice babyleaf salad and rucola, you decide how much salad to put in, but I advice 3 dl, chopped rather finely

1 tablespoon olive oil
3 tablespoons applejuice

Combine olive oil and applejuice in a bowl. put in all ingredients exept salad and mix well. Add the salad and mix some more.

* Concerning asparagus. You should preferably eat them raw, usually I boil some water and pour it over the asparagus in a small separate bowl. Leave it for just ½ or 1 minute, and remove the water. This way they will be almost raw, and it gives them a really nice consistency.

Strawberry and Asparagus salad

This salad is one of my faves, it just feels so HEALTHY and alive. This is the way I make it, but to make it heavier, you can add some couscous.
The amounts really is just aproximately, but the thumbrule is a little more asparagus than strawberry.

Strawberry and Asparagus salad
3 cups of strawberry, cut in quarters.
1 bunch of green asparagus, cut in bites ( ca. 3 cm), and boiled very briefly, just one minute.
1 packet of baby salad, sliced
½ dl grated coconut, slightly roasted
½ dl ground sesamy seeds, slightly roasted
½ dl cashew nuts, chopped in large pieces
½ dl orange juice
1 teaspoon olive oil

combine juice and olive oil in a salad bowl, add the baby salad, and mix. Add the asparagus plus strawberries and mix. Now, add the coconut, cashew and sesamy and mix some more. And that´s about it. If the salad feels too dry add a little more orange juice.

Daily sketch

For some time now, I have been doing a daily sketch or two, each lasting about 30 minutes, each finished and signed...wow you´ll get a lot of drawings in this way. But apart from that, it really is a wonderful experience, I can only recommend it. Hope I´ll soon be able to record some sketchings on video for you. Grape and Walnut Salad

This salad has a very lovely sweet/sour feel from the grapes and the walnuts lends depth to the taste. It´s good alone, but is a nice compagnion to most warm meals. Enjoy!

Grape and Walnut salad

1 packet of mixed babyleafs (or other salad) sliced
3 cups of red grapes cut in quarters
1 cup of walnuts, roasted and chopped

Dressing
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 teaspoon canesugar or syrup

Combine dressing ingredients in the salad bowl. Add sliced salad and mix. Add grapes and walnuts and mix more. That´s about it.
